Character: White powder, odorless, slight deliquescence, hardly soluble in water (0.095g/100ml 25℃), almost insoluble in ethanol. Calcium citrate may start to lose crystal water when heated to 100. The crystal will lose water completely when heated to 120℃.

Usage: Tricalcium citrate is commonly used in food processing for various applications:

2. Acidity regulator: Tricalcium citrate acts as an acidity regulator, helping control and adjust food products’ pH levels. It aids in maintaining the desired acidity or alkalinity for optimal taste, texture, and stability.

3. Anticaking agent: Tricalcium citrate can be used as an anticaking agent in powdered or granulated food products. It prevents clumping and ensures the free flow of particles, enhancing the product’s texture and usability.

4. Antioxidant stabilization: Tricalcium citrate has antioxidant properties and can help stabilize food products by inhibiting oxidation. This extends the shelf life of the products and helps maintain their quality.
