Usage: Tricalcium citrate is commonly used in food processing for various applications:
1. Calcium fortification: Tricalcium citrate is used to fortify food products with calcium. It is particularly beneficial in products where other forms of calcium may not be easily incorporated or have compatibility issues.
2. Acidity regulator: Tricalcium citrate acts as an acidity regulator, helping control and adjust food products’ pH levels. It aids in maintaining the desired acidity or alkalinity for optimal taste, texture, and stability.
3. Anticaking agent: Tricalcium citrate can be used as an anticaking agent in powdered or granulated food products. It prevents clumping and ensures the free flow of particles, enhancing the product’s texture and usability.
4. Antioxidant stabilization: Tricalcium citrate has antioxidant properties and can help stabilize food products by inhibiting oxidation. This extends the shelf life of the products and helps maintain their quality.
5. Texturizing agent: Tricalcium citrate can also act as a texturizing agent, contributing to food products’ desired texture and mouthfeel. It improves the smoothness, creaminess, or chewiness of various processed foods.
